Bailey’s Cheese Ball Dip
Bailey’s Cheese Ball Dip combines two of my favorites–cheese ball and dip. But this is not your traditional cheese ball and dip. This is a sweet and salty indulgence with a kick of Bailey’s. This dip is so versatile, you could serve it with a cookie for dipping or a chip. You could use nilla wafers, animal crackers, pretzel chips, or fritos just to name a few. This dip would be perfect for that holiday celebration. The original recipe I made uses Ande’s baking chips, but I have also used mint kisses whirled in my food processor. I believe that version makes for a better presentation because of the white and red color of the kisses but lacks the chocolate of the Ande’s mints. Serve Bailey’s Cheese Ball Dip alongside my Dreamy Lemony Cream Horns, and you have the perfect holiday table.

Bailey’s Cheese Ball Dip:

- 2 -8 ounce packages cream cheese, softened
- 1 1/2 cups shredded mild cheddar cheese
- 1/2 cup Bailey's liqueur
- 1/4 cup half & half
- 1/2 teaspoon salt
- 1 cup chopped pecans
- 1 cup Ande's baking chips
- assorted chips or cookies for dipping
Cream the cream cheese in a medium bowl.
Add the cheddar cheese, half & half and Bailey's.
Mix well and smooth into a serving plate (I used a pie plate).
Sprinkle the salt on top.
Mix the pecans and baking chips together.
Sprinkle over the top of the dip.
Chill until ready to serve.
Serve with assorted cookies or chips.
