Everyone loves French toast–don’t you? Well, who says French toast has to be the same old thing. I mixed things up a bit by placing my French toast in a casserole baking dish, layering on a mixed berry pie filling and topping it off with my oatmeal streusel topping. Easy French Toast Casserole with Mixed Berries is so rich, you really do not need syrup for this one. I tried it with and without, and it is equally delicious and yummy.

I happened to have a can of mixed berry pie filling in my pantry. But you could use any pie filling you like. In fact, cherry would be nice for Valentine’s Day, and apple would be excellent in the fall. I love to use streusel topping for a little extra yumminess, but I like to mix things up a bit by adding oatmeal to my streusel. I am a big fan of oatmeal; so you will find oatmeal in many of my recipes.

Ingredients
  • 5 slices large bread
  • 1 egg
  • 1 cup milk
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 10 ounces mixed berry pie filling
Streusel Topping
  • 3/4 cup oatmeal
  • 1/3 cup flour
  • 1/3 cup brown sugar, packed
  • 4 tablespoons butter
Instructions
  1. Whisk the egg, milk, vanilla and cinnamon together in a medium bowl. Cut each piece of bread on the diagonal and dip into the egg mixture. Place in a 7 x 11 casserole dish that has been sprayed with cooking spray. You will need to overlap the half pieces of bread. Spread the pie filling evenly on top of the bread.

  2. To make the streusel topping, combine the oatmeal, flour and brown sugar in a medium bowl. Cut in the butter with a pastry blender or two knives. Sprinkle over the pie filling.

  3. Bake in a preheated 350 degree oven for 40 minutes. Cool until ready to serve.
