I am pretty traditional when it comes to the pizza toppings I enjoy. I like veggies including onions and peppers, mushrooms and pepperoni. Of course, this recipe has the meatballs as the base for the recipe. What toppings do you enjoy? To make this really easy, I use frozen meatballs and jarred pizza sauce. And the pepperoni I like to use is the really small variety that you can also use in salads. Also, a thicker sub bun works really well with this recipe. Ingredients
  • 4 sub rolls
  • 1 tablespoon olive oil
  • 3/4 cup chopped onion
  • 3/4 cup chopped bell pepper, any color
  • 14 ounces pizza sauce
  • 20 frozen meatballs
  • 4 ounce can of sliced mushrooms, drained
  • 3 ounces pepperoni minis
  • 1 cup shredded cheese such as mozzarella, colby, monterey jack
Instructions
  1. Saute the onion and bell pepper in the olive oil until tender.

  2. Add the pizza sauce and meatballs, and simmer for 5 minutes until the meatballs have thawed.

  3. Add the mushrooms and pepperoni.

  4. Open the buns up and place on a serving plate with cut side up.

  5. Put 5 meatballs in each bun and spoon the sauce and toppings on top of the meatballs.

  6. Top each sandwich with 1/4 cup shredded cheese, and microwave for 1-2 minutes to melt the cheese.
