ATTENTION: I would like to proudly announce a new category on my blog called “My Farm to your Table.” I have to admit, I do not live on a farm. However, I do live in a small midwest community surrounded by farms, and I love to garden and grow my own produce. There is something very satisfying about seeing the fruits of your labor turning into a harvest bounty. I just love it, and I love the freshness of harvesting and cooking all in the same day. I am also a big fan of our local farmers market. Since I only have a small plot to garden in, when I frequent the farmers market I can purchase produce that I do not grow. I grew all the produce listed in this recipe for Farm to Table Healthy Vegetable Stir Fry except for the yellow onion and corn.

Since fresh green beans can taste a little “green,” I like to use bacon and bacon grease for seasoning. First, I blanch the green beans to speed the cooking process, and then stir fry them first since they require more cooking time than the other produce in this recipe. I like to cut the corn right off the cobb without doing any pre-cooking to them before adding to the stir fry.

Farm to Table Healthy Vegetable Stir Fry can be served hot or cold because the dressing is just fresh lemon juice, Greek vinaigrette salad dressing and seasonings. Ingredients
  • 4 slices bacon
  • 1/2 pound fresh green beans (with stems removed)
  • 1/2 large yellow onion, sliced
  • 3 green onions, sliced
  • 1 small green pepper, cut into thin slices about 2 inches long
  • 1 small zucchini, sliced and quartered
  • 1 summer squash, sliced and quartered
  • 2-3 ears fresh corn-on-the-cob with the corn cut off the cob
Dressing:
  • 2 tablespoons Greek vinaigrette dressing
  • juice from half of a fresh lemon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions
  1. Cook bacon in a large stir fry pan until crisp. Remove the bacon and reserve for later use. Set aside this pan.

  2. Blanch the green beans by bringing a large pan, filled 2/3 full with water, to a boil. Add the cleaned green beans to the boiling water and boil for 3 minutes.

  3. To the stir fry pan with the bacon grease, add the green beans and saute for 4 minutes over medium-high heat.

  4. Next, add the onion, green onion and green pepper to the stir fry and cook for about 3 minutes.

  5. Add the zucchini, summer squash and corn and stir fry for about 2 minutes.

  6. Add the Greek vinaigrette dressing, lemon juice and seasoning to the stir fry. Saute for an additional minute before removing from heat.

  7. Place the stir fry in a serving bowl. Crumble the bacon on top.
