I love a good taco dip, and this Single Serve Seven Layer Taco Dip is perfect for that Cinco de Mayo celebration. Different variations of this dip have been around for years, and I can understand why. It is a real winner with the many colorful layers.

I made this dip in single serve form for an office party a couple of years ago. I quickly learned that the trick to making it in single serve form is to use wide-mouth serving cups. When I made these for that party, I used a narrower cup, and it was really hard to add the ingredients. Do yourself a favor, and head to the dollar store and pick up some clear wide-mouth cups. You will thank yourself for it. When you have your own individual serving cup, you do not have to worry as much about germs; there is no double dipping by others.

Ingredients
  • 16 ounces refried beans
  • 8 ounces guacamole
  • 1 1/2 cups chopped lettuce
  • 8 ounces sour cream
  • 1/2 package taco seasoning
  • 8 ounces salsa
  • 1 1/2 cups mild cheddar cheese, shredded
  • 1 chopped tomato
Instructions
  1. Using wide-mouth clear cups, begin layering in the ingredients.

  2. Layer in the refried beans, the guacamole and the chopped lettuce.

  3. In a separate bowl, mix together the sour cream and the taco seasoning.

  4. Layer in the sour cream mixture, the salsa, the cheese and tomato.

  5. Refrigerate until serving time, and serve with your choice of chips or veggies for dipping.
