Unroll pie crust, and form into a pie plate.
Whisk the eggs in a medium bowl.
Add the cottage cheese, milk, ham, green onion, salt and pepper and mix well.
Pour into the prepared crust.
Sprinkle the cheddar cheese over the egg mixture.
Optional: Sprinkle the graham cracker crumbs over the cheese.
Lay the pineapple slices on top.
Bake in a preheated 375 degree oven for about 40 minutes until the eggs look set and golden brown.
