If you like a good Italian beef sandwich, you are going to love my version of this slow cooker meal.
If there is any visible fat around the parameter of the roast, trim this off with a sharp knife. Place the roast in the bottom of the slow cooker.
Add the rest of the ingredients in the order listed. No need to stir. Cover with the lid.
Cook on high for 8 hours. I like to flip mine over after about 4 hours.
After 8 hours of total cooking time, remove the lid and continue to cook on high for at least an additional hour to cook down some of the liquid.
Serve on your choice of buns. Serve the peppers on the sandwich or on the side.
