Slow Cooker Italian Beef with Pepperoncinis

If you like a good Italian beef sandwich, you are going to love my version of this slow cooker meal.

  • 3-4 pound beef roast
  • 14.5 ounces beef broth
  • 1 tablespoon minced garlic
  • 1 packet Italian dressing
  • 1 packet au jus gravy
  • 1 large onion, cut into sections
  • 18 ounces pepperoncinis, whole or sliced (if you do not like spicy, you will want to drain these)
  • 8-10 buns of your choosing


  1. If there is any visible fat around the parameter of the roast, trim this off with a sharp knife. Place the roast in the bottom of the slow cooker.

  2. Add the rest of the ingredients in the order listed. No need to stir. Cover with the lid.

  3. Cook on high for 8 hours. I like to flip mine over after about 4 hours.

  4. After 8 hours of total cooking time, remove the lid and continue to cook on high for at least an additional hour to cook down some of the liquid.

  5. Serve on your choice of buns. Serve the peppers on the sandwich or on the side.
