Ingredients

  • 1 1/2 cups oatmeal, quick-cook variety
  • 1 cup flaked coconut
  • 2 cups trail mix
  • 1/2 cup peanut butter
  • 2/3 cup applesauce, chunky
  • 1 egg
  • 1/2 cup honey
  • 1 teaspoon vanilla

Instructions

  1. Whirl the oatmeal in a food processor or blender until a small crumble state is achieved.

  2. Combine all the ingredients in a large bowl and mix well.

  3. Spread in a parchment-lined 9 x 9 baking pan. Bake in a 375 degree oven for 35 to 40 minutes until they start to brown around the edges.

  4. Cool completely before cutting into bars.
