I love zucchini. It is so versatile because you can use it in main-course dishes, in side dishes and in desserts and breads. That’s a lot of bang for your buck. In addition, zucchini is relatively easy to grow here in the midwest. HINT: Pick your zucchini when they reach a medium size. That way, your zucchini will remain tender.
The above ingredients really compliment. If you have fresh tomatoes from your garden, you could use those instead of the canned stewed tomatoes. I would just roughly chop up about 3-4 large tomatoes instead. I made this recipe in the early stages of my garden, so my tomatoes had not matured yet. Either way makes for a delicious dish.
The one issue I have had in the past with growing zucchini is an infestation of squash bugs as the summer months progress. That is why you have to be very diligent when you are growing a garden. Bugs can take over very quickly. You need to check your garden every day, or at least every other day for the presence of these predators. It is also important to trim any dying leaves from your plants. This also discourages bugs.

- 1 medium zucchini
- 1/2 medium onion
- 1/3 cup parmesan & Romano cheese
- 1/3 cup Italian bread crumbs
- 14.5 ounces stewed tomatoes
- 1/2 cup shredded mild cheddar cheese
Slice the onion. Separate the rings and spread around in a medium rectangle casserole dish that has been sprayed with cooking spray. Sprinkle the onions with half of the parmesan & Romano cheese and half of the Italian bread crumbs.
Slice the zucchini and layer on top of the onion rings. Sprinkle on the remaining parmesan & Romano cheese and bread crumbs.
Add the stewed tomatoes on top. You will probably want to roughly chop the tomatoes. Sprinkle the shredded cheddar cheese over the top.
Bake in a preheated 400 degree oven, covered, for 45 minutes.
